Homemade macaroni pie Recipe.

 

 

 Ingredients: 

2 cups elbow macaroni 

2 1/2 cups cheddar cheese or emmental cheese (grated) like I used. 

1 1/2 cup evaporated milk 

1/2 cup heavy cream 

1/2 tablespoon sea salt 

1/4 teaspoon thyme 

1/2 teaspoon cumin 

1/4 ground teaspoon ground pepper. 

1 bouillon cube 

1 large onion grated 

1 shallot sliced 

2 garlic cloves minced 

Half red bell pepper some sliced, some chopped Half green bell pepper some sliced, some chopped 

Water to boil macaroni 

NB: I did not use eggs but you can if you desire. 

 

Instructions: 

Preheat oven to 350 degrees F Grease your baking dish/casserole and set aside.

Bring water (enough to cook the macaroni) to a boil in a large pot over high heat. 

Pour the macaroni into the pot, add a little oil. Lower the heat to medium and cook the macaroni until al dente (about 10 minutes). Pour the macaroni into a strainer to drain the water. Run the macaroni under cold running water over the sink to stop the cooking process. Place the macaroni back into the pot and add 2 cups of cheese to the macaroni. Set aside 1/2 cup cheese to sprinkle on top. 

Add grated onion, chopped bell peppers, garlic, thyme, cumin, ground black pepper, bouillon cube and mix. 

Add milk and cream and combine. 

Pour and evenly distribute the macaroni and cheese into a greased baking dish/casserole. 

Top the macaroni and cheese with the remaining cheese. 

Bake the macaroni pie for 20 minutes. 

Remove from oven, add sliced red and green bell peppers (spread evenly) Continue to bake the macaroni for an additional 15 minutes. 

Allow the macaroni pie to rest for at least 15 minutes before serving. Enjoy alone or pair with a variety of dishes. We enjoyed with tomatoes.😋🍽🍛🍅🍷
